Lasagna Roll-Ups

This is a fairly easy alternative to a whole pan of lasagna.

Lasagna Roll-Ups


Ingredients:

12 lasagna noodles

2 cups ricotta cheese

1 egg

1 1/2 tbsp dried parsley

2 cups shredded mozzerella cheese, divided

1 lb ground beef, browned and drained

1 jar (28 oz) marinara sauce, divided

Instructions:

Preheat oven to 375 degrees.

Cook noodles according to package directions. Drain and rinse with cold water.

Mix ricotta, egg, parsley and 1 cup mozzarella in a bowl - set aside.

Spread 1/2 cup of sauce in the bottom of a 9 X 13 inch baking dish.

Spread 3 tblsp ricotta mixture on each noodle.

Top each noodle with some of the beef.

Roll each noodle into a swirl.

Arrange each roll in the baking dish - seam sides down in the dish.

Top roll-ups with the remaining sauce and the remaining mozzarella.

Bake - loosely covered - for 15 minutes.

Remove cover and bake for 10 minutes longer or until brown and bubbly.
